For tends of thousands of years, food has been an integral element of Cultural Identity

At the core of Zach’s values is profound respect for each First Nations' Country, Community, and Culture.

By prioritising respect for Country, Community, and Culture, Zach aims to contribute to a stronger, more connected future for Traditional Owners and First Nations peoples, while honouring and preserving Indigenous cultural heritage.

This guides Zach’s approach to open communication, seeking guidance from Elders, and obtaining permission from Elders before he cooks, works, or collaborates on Country.

Wherever possible, Zach also aims to collaborate with Indigenous-owned businesses and suppliers to support the growth of Indigenous entrepreneurship.

Advocating for mental health is a passion of Zach’s. He is a vocal supporter of prioritising mental health in hospitality and ensuring that kitchens and workplaces support, respect, and nurture their people.

Sustainability is also at the heart of Zach’s work sourcing ingredients ethically, minimising waste, and supporting local wherever possible.
